French Onion Dip

  • shallots, 190 grams

  • pork fat, 40 grams

  • q-rub, 11 grams

  • sour cream, 363 grams

  • chives, 13 grams

  • worcestershire sauce, 12 grams

  1. Melt the fat and micro dice the shallots

  2. Add both the fat and shallots to a pan and slowly cook until the shallots are soft and clear

  3. Cool down the shallot mixture, fine chop the chives while this is cooling

  4. Add the chives, Q rub, sour cream, and cooled onion mixture to a bowl and mix well

  5. Let mixture sit in the refrigerator for a few hours to chill and marinate before serving
